As a
Sous Chef (m/f/d) you will support our chefs in the operational and administrative areas of the kitchen.
Whether you are a Gardemanger, Entremetier, Saucier or Poissonier - you know what to do at every position. Coordinating, structuring and organizing is in your blood? Do the creations you conjure up impress across the board? Then our main kitchen is the right place for you.
The Jagdhaus Eiden and its restaurants have been known regionally and nationally for decades. In addition to good à-la-carte cuisine, a 5-course half-board menu is created and cooked here daily for our approx. 220 hotel guests (at full capacity).
Your tasks:
- Management & coordination of the kitchen team in the absence of the head chef
- Managing your own post
- Mise-en-place and proper preparation of all dishes according to recipe
- Ordering and organizing goods
- Developing new dishes in coordination with head chef Tim Extra
- Further development, management and archiving of recipes
- Compliance with all hygiene regulations
- Professional and proper handling of all kitchen appliances and utensils
- Proper storage of all food and raw materials
- Supervision and guidance of colleagues, trainees and interns
Your profile:- Completed training as a chef and several years of professional experience
- Experience in the à-la-carte business
- Independent way of working
- Creativity, organizational skills and openness to new ideas
- Sense of responsibility & good knowledge of hygiene, merchandise management and control
- Ability to work in a team
