Restaurant Manager and Sommelier (m/f/d) with an immediate start to strengthen our team in the Gourmet Restaurant Apicius.
As restaurant manager and sommelier (m/f/d) you will form the dual leadership of the Gourmet Restaurant Apicius together with our chef.

We serve a maximum of 28 guests per evening. The Apicius has regular opening hours from Wednesday to Saturday, each evening. On another day of the week you will support our team in the main restaurant, the Jägerstuben and Fischerstuben, where we serve our 5-course half-board and also à-la-carte dishes.
Your tasks:- Management of the service team (station management).
- Professional serving of food & beverages in the gourmet restaurant Apicius as well as one day a week in our main restaurant, the Jäger- und Fischerstuben
- Daily coordination with the chef
- Cordial, competent, and professional care of our guests, also in case of complaints
- Training, guidance, and control of trainees, as well as all employees in their own area
- Writing of duty rosters, participation in regular meetings, coordination and optimization of service procedures
- Professional way of working according to business aspects
- Staff management and motivation
- Compliance with quality and hygiene guidelines
- Cash register maintenance / programming
If
sommelier training is available, then the
following tasks are also part of your area of responsibility:
- Recommendation of wines to dishes and active selling to the guest
- Responsibility for the wine cellar (purchasing in cooperation with Mr. zur Brügge, inventory, monitoring of stocks, optimal storage)
- Guided tours through our wine cellar with hotel guests as well as wine tastings
- Calculation of wine sales prices
- Creation and design of the wine list, the wine tour in the gourmet restaurant as well as written recommendations for the daily menu in the main restaurant
- Training of colleagues on the subject of wine
- Assistance in our own vineyard (a few hundred meters from the hotel)
Your profile:- Pronounced hospitality mentality
- Completed vocational training in gastronomy or hotel business
- Great professional and technical interest & knowledge
- Ideally completed sommelier training
- Experience in top gastronomy as well as first management experience
- Pronounced quality and cost awareness
- Very good language skills in German, ideally language skills in English
- Neat appearance and a sense of cleanliness in the workplace
- Exemplary manners, confident appearance, charm, flexibility
- High quality awareness as well as creativity for your work environment
- EDP knowledge for administrative activities
