Berlin, Austria, and Switzerland marked additional stops in his formative years. Since 2014, Tim Extra has been cooking and captivating at our gourmet restaurant, Apicius.

  • Adding to the experience is the hotel's own vegetable and fruit garden. A greenhouse supplies the gourmet kitchen with a variety of herbs.

Our creative mind 

Tim Extra is the creative mind behind Apicius. The native Nordener took on responsibilities from a young age, earning his first awards as a chef at Qulinaris in Norden. Berlin, Austria, and Switzerland were additional stops during his apprenticeship and journeyman years. Since 2014, Tim Extra has been cooking and captivating guests at our gourmet restaurant, Apicius.

Tim Extra excels in classical cuisine with modern accents, using regional products to create culinary delights.

From our own garden

In addition, there is a hotel-owned vegetable and fruit garden. A greenhouse supplies the gourmet kitchen with a variety of herbs.

The grounded essence is further enhanced by the in-house breeding of Bentheimer pigs and the eggs from free-range chickens, which make occasional appearances in Chef Tim Extra's menus.
